Chapter I — The Fire

Wood-fired dinner.

No gas. No dial. Just oak, time, and whoever is tending the coals.

Everything we serve passes through the hearth — bread at the start of service, vegetables laid straight into the coals, birds and fish over a low bed of embers. The fire sets the pace of the night, and we let it. What reaches your table carries a little of that smoke with it.

A short, restless cellar — every bottle alive, none of them around for long.

Wines farmed gently and bottled with a light hand, poured by people who actually drink them. If you don't see your usual, that is rather the point. Ask what is open — there is always something we could not resist.

Limewashed walls, Oregon white oak worn smooth by elbows, and a hearth that never fully goes out. Tables close enough to feel the hum of the night, far enough to keep your secrets.
